Sesame Crusted Salmon Ingredients
Four 6-7 oz. portions salmon filet
1/3 cup raw unhulled sesame seeds
2 tsp granulated garlic
1/8 tsp salt
Sweet And Spicy Thai Chili Butter Ingredients
3/4 cup thai sweet chili sauce (available in asian markets and natural foods stores)
1/2 tsp crushed fresh garlic
2 Tbsp lime juice
1/2 tsp lime zest
3 Tbsp very soft or melted butter
hot sriracha chili sauce for extra heat and to decorate plate (optional )
chopped scallions, lime slices and thai basil (parsley if thai basil unavailable) for garnish
Asian Slaw Ingredients
2 cups each, slivered green and purple cabbage
2/3 cup slivered red pepper
dressing
1/2 cup mayo
2 tsp fresh crushed garlic
2 Tbsp sushi vinegar (seasoned rice vinegar)
1/2 tsp minced fresh ginger
combine cabbage and dressing and mix well
Directions
Mix the sesame seeds, garlic and salt. Dredge the salmon portions in the sesame mixture and pan sear in a medium hot frying pan (with approx 2 Tbsp vegetable oil) until crust is golden brown. You will probably need to turn heat down to finish cooking fish after you achieve the golden brown color for crust.
Place cooked fish portions on steamed brown or white rice. Drizzle about 3 Tbsp chili butter over each portion of fish. Garnish plate with lime slices, scallion and thai basil or chopped parsley and serve with asian slaw.
