BEHIND THE SCENES AT GELATO FIASCO

Gelato Fiasco makes innovative artisenal gelato flavors from scratch in Brunswick, Maine. They are available at their Flagship Store in Brunswick, and in their new store in Portland's Old Port.

Strawberry Balsamic Sorbetto

The Gelato Fiasco has adapted the recipe for its best-selling Strawberry Balsamic Sorbetto so that you can create it in your own kitchen. It's the perfect flavor for a Maine summertime dessert... or for a special treat any time of day. You'll need a standard home ice cream maker and just a few ingredients.

Ingredients:
1 lb. fresh Maine strawberries
12 oz. sugar
12 oz. water
1 tablespoon lemon juice
2 teaspoons organic balsamic vinegar
¼ teaspoon sea salt

Directions:
Start by making a simple syrup with the sugar and water. On stovetop, mix 12 ounces of water with 12 ounces of sugar. Heat until sugar is completely dissolved. Do not bring to boil. Pour into heat-safe container and allow simple syrup to cool.

Cut up strawberries and mix with simple syrup. Puree mixture in food processor or blender. Add lemon juice, balsamic vinegar, and salt, and continue blending until smooth.

Tip: Placing the blended mixture in the fridge for a few hours or up to overnight before freezing makes it freeze faster and smoother.

Freeze according to manufacturer's instructions on ice cream maker. Enjoy!

Creates about 2.5 pints.
